Secret Ingredient: Whole Squid
1st course:
Calamari Soup with ginger broth and red chile
2nd course:
Grilled Squid Salad with lime vinaigrette and wine poached peach slices
3rd course:
Squid Ink Pasta Putanesca
4th course:
“Surf and Turf” – Fried Calamari rings with 5 spice chicken breast, red curry sauce, jasmine rice, braised bok choy.
5th course:
Grilled squid and mango salad with organic greens and roasted red pepper dressing
Secret Ingredient: Pork Loin Center Cut
1st course:
Pork satay salad with spicy peanut dressing, roasted corn and avocado.
2nd course:
Cajun dry rubbed pork with crispy yams, roasted garlic and hatch chile sauce.
3rd course:
Pork loin stuffed with dried apricots, goat cheese and fresh herbs. Served with apple chutney and roasted seasonal vegetables.
4th course:
Sliced pork loin poached in ginger broth. Served over brown sugar couscous with Chantilly cream and rasins.
